Here’s what you are going to need to make it:

  • 1 Tsp Miso paste
  • 1/4 cup Noodle water
  • 1 tbsp Chili oil
  • 1 tsp Soy sauce
  • 1 tsp Dark soy sauce
  • 1 tbsp Rice vinegar
  • 3 Garlic cloves (minced)
  • Scallion for garnish
  • Sesame seeds for garnish

Step 1: Boil the Noodles

  • Boil a pot of water and cook the noodles according to the package instructions. Drain and rinse under cold water. Set it aside. Save the noodle water for later use.

Step 2: Sauté the Aromatics

  • Heat some oil in a pan and add some garlic minced out of 3 cloves.

Step 3: Add Noodle Water

  • Next add in noodle water in the same pan.

Step 4: Make the Sauce

  • In a bowl, mix the chili oil, soy sauce, sesame oil, minced garlic, and ginger. Adjust the amount of chili oil based on your spice preference.
  • If you’re adding vegetables or protein, heat a little oil in a pan over medium heat. Stir-fry the vegetables or protein until it is thoroughly cooked. Add the cooked noodles and mix everything together.

Step 5: Add the Sauce

  • Pour the sauce over the noodles (and vegetables or protein) in the pan. Toss everything to allow it to mix it properly, ensuring the noodles are evenly coated.

Step 6: Garnish and Serve

  • Transfer the preparation to the plates, garnish with chopped green onions and sesame seeds. Enjoy!

  • If you like it spicier, feel free to add more chili oil or even some fresh chili slices.
  • You can store any leftover sauce in the fridge for up to a week. Just give it a stir before using it again.
