Cheesy Cajun-Piri Piri Chicken & Potatoes

  • First, let’s prepare the chicken. In a bowl, mix the chicken pieces with Piri Piri seasoning, Cajun seasoning, and turmeric. Mix everything thoroughly to ensure that each piece is evenly coated with the spices. This step is important for flavor, so take your time to make sure every bite is packed with taste!
  • Now, let’s move on to the potatoes. In another pan, heat some oil over medium heat and add the potato cubes, seasoning them with the same spices used for the chicken. Fry the potatoes for about 10 minutes or until they are tender and soft. Remember to stir occasionally to prevent them from burning. Potatoes truly are the ultimate comfort food they’re versatile, delicious, and pair perfectly with just about anything!
  • Once the chicken is cooked, pour the single cream and stir well to mix it with the chicken and spices. Then, add the crispy potatoes to the mixture and give everything a good stir to make sure it is mixed well. Let it cook for 2 more minutes, letting the flavors mix. Finally, sprinkle cheddar and mozzarella cheese on top as required and let it melt.
  • 3 boneless, skinless chicken breasts, cut into small pieces.
  • 2 tsp Piri Piri seasoning
  • 2 tsp Cajun seasoning
  • 1 tsp Paprika (optional)
  • Salt to taste
  • 1/2 tsp turmeric (for color)
  • 3 large potatoes, cut into small cubes
  • Oil for frying
  • 130ml single cream (or preferred cream)
  • 1/4 cup Cheddar cheese (shredded)
  • 1/2 cup Mozzarella cheese (shredded)
  • Fresh Parsley (for garnish)
  • 1/4 tsp Chili Flakes (optional)
  • Take 3 boneless, skinless chicken breast and place them on a clean cutting board. Cut the chicken into small pieces, about 1-inch (2.5 cm) in size. In a medium-sized bowl, mix together 2 tsp Piri Piri seasoning, 2 tsp Cajun seasoning, 1/2 tsp turmeric and rest of the mentioned seasonings. Add the chicken pieces to the bowl and toss to coat evenly with the seasoning mixture. Make sure each piece of chicken is fully coated with the seasoning mixture.
  • Heat 2-3 tablespoons of oil in a large pan over medium-high heat. Add 3 large potatoes, cut into small cubes, to the pan. Sprinkle the same seasoning mixture used for the chicken over the potatoes. Fry the potatoes for 5 minutes on each side, or until they are soft and golden brown. Stir the potatoes occasionally to prevent burning.
  • In a pan, heat 2-3 tablespoons of oil over medium-high heat. Add the seasoned chicken pieces to the pan and cook until browned on each side. Cook for 5-6 minutes or until the chicken is cooked through. Remove the chicken from the pan and set aside on a plate.
  • Add 130ml single cream to the pan with the cooked chicken and stir well. Add the crispy potatoes to the chicken mixture and stir well. Cook for an additional 2 minutes, stirring constantly.
  • Sprinkle shredded cheddar cheese over the top of the chicken and potato mixture. Let the cheese melt and serve hot. Garnish with chopped fresh herbs, such as parsley or cilantro, if desired. Sprinkle some chili flakes on top. (optional)
  • Serve the Spicy Chicken and Potato Delight hot, straight from the pan. Enjoy the creamy, spicy, and savory flavors of this delicious dish!
  • Adjust the seasoning to taste. If you prefer a bit more heat, feel free to add extra Piri Piri seasoning to amp up the spice level! It’s all about making it just right for your palate, so don’t be shy about experimenting with the flavors until it’s perfect for you!
  • Feel free to mix it up by using different types of cheese for sprinkling! cheddar and Parmesan works wonderfully as well. Experimenting with different cheeses can elevate your Spicy Chicken and Potato Delight to a whole new level of delicious!
  • For an extra boost of flavor and nutrition, consider adding diced veggies like bell peppers, onions, or even zucchini to the chicken and potato mixture. Simply sauté them along with the chicken before adding the cream and potatoes. This addition not only enhances the dish’s taste but also adds vibrant colors and texture, making your Spicy Chicken and Potato Delight even more delightful!
  • For an extra crispy potato topping, try broiling the potatoes in the oven for a few minutes after frying. Just spread the fried potatoes on a baking sheet and place them under the broiler until they’re golden brown and crispy. This step adds an irresistible crunch to your Spicy Chicken and Potato Delight, taking it to the next level! Just keep an eye on them to prevent burning!
  • Be careful not to overcook the chicken or potatoes! Cook them just until they’re done to ensure they stay juicy and tender. Overcooking can lead to dry chicken and mushy potatoes, so keep an eye on them while they cook. A little attention goes a long way in achieving that perfect texture for your Spicy Chicken and Potato Delight!
  • It’s important to stir the potatoes occasionally while frying to prevent them from burning. If you leave them unattended, they can easily develop a burnt exterior while remaining raw inside—definitely not what you want! Keep them moving in the pan for even cooking and that perfect golden-brown finish. Nobody likes burnt potatoes, so give them the attention they deserve!
