PROCESS:

  • First, let’s prep the steak by marinating it in a flavorful mix of ingredients. Next, we’ll cook the noodles according to the package instructions.
  • While the noodles are cooking, prep the sauce. Once the noodles are ready, it’s time to sear the steak in a hot wok until it’s browned and juicy.
  • After that, we’ll sauté onions and broccoli in the same wok. Finally, let’s combine everything add the cooked noodles, pour the sauce over the mixture, and stir-fry until everything is heated through and coated in the sauce.

Here’s what you are going to need to make it:

Cornstarch: This helps the steak to crisp up and brown nicely when cooked.

Soy sauce, rice wine vinegar, ginger powder, and garlic powder: These ingredients give the steak a delicious, savory flavor profile.

Sesame oil: This adds a nutty flavor and helps to give the stir-fry a nice golden color.

Onions: These add a sweet and slightly pungent flavor to the stir-fry.

Noodles: These are the base of the dish, providing a satisfying texture and filling the stir-fry.

Broccoli: This adds a healthy dose of nutrients and a nice crunch to the stir-fry.

Oyster sauce: This gives the sauce a rich, umami flavor.

INGREDIENTS

For the steak:

  • 1 Lb steak
  • 1 tbsp cornstarch
  • 3 tbsp soy sauce
  • 1 tbsp rice wine vinegar
  • 1 tsp ginger powder
  • 1 tsp garlic powder

For the stir-fry:

  • 2 tbsp sesame oil
  • 1/4 cup onions (diced)
  • 16 oz noodles (udon, spaghetti or any other noodle or pasta)
  • 16 oz broccoli

For the sauce:

  • 3 tbsp of Oyster Sauce
  • 2 tbsp of Soy Sauce
  • 1 tbsp of Rice Vinegar 
  • 2.5 tbsp of Minced Garlic 
  • 0.5 tbsp of white pepper
  • 1 tbsp of Sugar or honey
  • 2 tbsp of Ketchup
  • 2 tbsp water
  • Spring onion for garnish(optional)

INSTRUCTIONS

Step 1: Season the Beef

  • Take your steak and cut it into thin strips. In a separate bowl, toss the beef with soy sauce, cornstarch, rice wine vinegar, ginger powder, and garlic powder. Make sure every piece is coated evenly this will add flavor and help with the texture when cooking.

Step 2: Cook the Noodles

  • Start by boiling water in a large pot. Once it’s bubbling, add your noodles and cook them according to the package instructions. This usually takes about 5-10 minutes, depending on the type of noodles you’re using. Once they’re done, drain them in a colander and set them aside for later.

Step 3: Prepare the Sauce

  • In a small mixing bowl, combine the soy sauce, oyster sauce, white pepper, honey, ketchup, sugar, and rice wine vinegar. Whisk everything together until it’s well blended. In another bowl, mix some cold water with cornstarch to create a slurry; this will help thicken your sauce. Slowly pour the slurry into the soy sauce mixture, stirring as you go. Set this delicious sauce aside for now.

Step 4: Sear the Beef

  • Heat up 2 tablespoons of sesame oil in a hot wok over medium-high heat. Once the oil is shimmering, carefully add the seasoned beef. Sear the beef for a few minutes until it’s browned and cooked to your liking. If you prefer it medium-rare, just a couple of minutes will do.

Step 5: Sauté the Vegetables

  • Move the beef aside and add in the same wok, add a bit more sesame oil if needed. Toss in the diced onions and sauté them for a minute or two until they start to become translucent. Then, add the broccoli florets and stir-fry for another couple of minutes until they’re bright green and tender crisp. Finally, add the cooked noodles to the wok. Stir everything together on high heat, allowing the noodles to absorb the flavors.

Step 6: Incorporate the Sauce

  • Now it’s time to bring it all together! Gradually pour the sauce over the noodle and vegetable mixture, stirring constantly. This ensures that every bite is packed with flavor and the sauce thickens up nicely.

Step 7: Combine Everything

  • Give everything a good toss to mix it all together. Cook for an additional minute or two until everything is heated through and coated in the sauce.
